Today’s installment of Friday Foods is courtesy of a super simple recipe I found on a blog called Salt & Lavender – a simple ground beef casserole. This recipe is minimal ingredients and minimal effort. It serves six, so you’ll have leftovers if you’re making for two!
Ingredients:
1 pound (~450g) uncooked penne (I used fusilli for this recipe)
1/2 medium onion, chopped
1 pound (500g) extra lean ground beef (mince)
1 tablespoon olive oil
1 clove garlic, minced
1.5 cups marinara sauce (I couldn’t find any in the shop, so used pizza sauce instead)
Salt & Pepper to taste
1.5 cups of shredded cheddar cheese (I didn’t use this much and also used lactofree cheddar)

Preheat oven to 400F (200C). Grease 9×13 baking dish. I used sunflower oil to grease.
Cook pasta for 10 minutes, just so its underdone.
Add oil, beef, and onion to skillet. Cook until beef is browned and onions are soft. Then add garlic and cook for another minute.
Turn down heat and add in the sauce. Mix it through and taste. Add salt and pepper if needed.
Drain pasta and add to the baking dish. Pour beef mixture on top and mix through with the pasta. Add the layer of cheese on top.
Place on middle rack of oven and cook for 10 minutes or until the cheese is nicely melted.
And tada! You have a simple beef casserole to enjoy – it’s really that simple!
