This week was so busy for me! I didn’t get a chance to write as many posts, but I did get a chance to try some new foods! Here is a recipe for Pesto-Baked Chicken. It’s low-FODMAP and I used a homemade pesto. It’s so delicious!
Ingredients:
1 cup fresh Basil
5 tablespoons Olive Oil
2 tablespoons Walnuts
2 tablespoons Nutritional Yeast
Pinch of Salt
2 boneless, skinless Chicken Breasts
To make the pesto, combine basil, oil, walnuts, nutritional yeast, and salt in a food processor. Process until it forms a paste-like consistency, about 3 minutes.
Preheat oven to 400F. Spray and 8″x8″ baking dish with cooking spray. Place the chicken breasts in baking dish. Pour pesto over the chicken and coat both sides.
Bake for 20-25 minutes or until cooked through.
I made brown rice to eat this with to keep it low-FODMAP. It was so good! A really easy dish to make and the chicken turns out juicy!
