Friday Foods #10

Another yummy installment of Friday Foods coming your way and this time it is Chorizo-Crusted Penne with Cheese. A really easy and different pasta dish to add to your dinner rotation!

Ingredients:

1 Shallot

60g Cheddar Cheese

200g Penne

60g diced Chorizo

25g Breadcrumbs

1 tbsp. Olive Oil for breadcrumbs

1 tbsp. Veg Oil for Shallot

16g Flour

200ml Water

1 cube Chicken Stock Powder

150g. Créme Fraîche

Thyme

Preheat oven to 200C. Bring a large saucepan to boil with 1/2 tsp. of salt. Thinly slice shallot. Grate cheese. Once saucepan is boiling, add pasta and cook for 12 minutes.

Heat oil in frying pan. Add chorizo and stir fry for 1-2 minutes to let out the oil. Pour chorizo into bowl and add breadcrumbs and olive oil. Add pepper and stir to coat. Leave aside.

Heat same frying pan again. Add oil and shallot. Fry 3-4 minutes. Stir in flour, cook for 1-2 minutes. Stir in water and stock. Bring to a boil and then simmer to thicken. Stir in créme, then remove from heat.

Add thyme and cheddar to sauce and stir. Add pasta and mix through. Pour into an ovenproof dish. Sprinkle chorizo on top. Cook in oven for 5-6 minutes.

Serves in bowls for 2 people.
