Happy Friday! Can you believe we are coming to the end of the first work week in March? I feel like this week just flew right on by! Today’s Friday Foods is inspired by a great recipe I found – Honey Citrus Grilled Chicken with Basil Butter.
Ingredients for Marinade:
Juice of 2 Lemons
Juice of 2 Limes
2 tbs. of Honey
1 tsp. Salt
1/2 tsp. Black Pepper
2 cloves minced Garlic
The original recipe calls for 2 pounds of boneless, skinless chicken breasts, but I used 3 chicken thighs that we had in our freezer.
Ingredients for Basil Butter:
Original recipe calls for 1/2 cup of butter, but I did not use this much. I estimated how much I wanted by sight.
1/2 tsp. Garlic Powder
1/4 cup minced fresh Basil Leaves
Recipe calls for 1/4 tsp of crushed Red Pepper, but I did not add this.

Combine marinade ingredients together and marinate chicken for at least three hours. The original recipe suggests to marinate in a Ziploc bag, but I just put the chicken in a bowl with the marinade.
Combine butter ingredients in a small bowl. Refrigerate until ready to use.
The original recipe, I believe, expects you to grill this on your outdoor grill. I used the grill setting in our oven. It did take a little longer to grill than the 6-7 minutes each side the recipe suggests, but this was still an effective way to cook it.
When the chicken is done, spread the butter on top to let it melt. I made rice as a side with the chicken, but next time I would like to have mixed veggies with the rice.
