Another week has gone by and therefore, time for another installment of Friday Foods. This week’s recipe is another one involving pasta: Bacon Penne all’Arrabbiata. This is one of my favourite, easy, and delicious pasta recipes to make!
Ingredients:
1 Bell Pepper (I use red)
1 Shallot
90g Bacon Lardons
1 can Chopped Tomatoes
Paprika (I just judge how much to put in, but it is around 1 tsp to 1 1/2 tsp)
1 cube Chicken Stock Powder
200g Penne
1 bunch of Chives (to add at end)
Italian Hard Style Cheese (to add at end)
Preheat your oven to 200C. Bring a large saucepan to boil with 1/2 tsp. of salt. Thinly slice pepper and place on baking tray. Drizzle with oil and sprinkle salt and pepper. Toss and roast for 15 minutes.
Once water in saucepan is boiling, add penne and cook for 12 minutes or until tender.
Thinly slice shallot. Add oil to frying pan and turn to med-high heat. Fry bacon for three minutes. Stir in shallot and cook for another 3 minutes. Add tomatoes, paprika, and crumbled stock powder cube. Stir together to dissolve stock cube and let simmer for 10-12 minutes.

Once pepper is finished, add to sauce and stir through. Chop chives.
Once pasta and sauce are done, divide into two bowls. Add chopped chives and cheese.
