Here is another easy pasta dish for you to try! I couldn’t believe how easy this was to make – really perfect for a midweek meal when you don’t want to think about dinner.
Creamy One-Tin Meatball Pasta (adapted from Good Housekeeping UK)
Serves 2
100g mascarpone or full-fat cream cheese (I used lactose-free cream cheese)
500g passata with basil/herbs (my passata didn’t have herbs in it, so I added dried basil)
12 raw beef meatballs, about 350g
2 tsp olive oil
250g dried pasta (I used penne)
125g mozzarella ball, drained and torn
- Preheat oven to 220C (200C fan) mark 7. In a jug, whisk together the mascarpone/cream cheese and the passata with seasoning until combined. In a bowl, toss the meatballs with the oil.
- Put the pasta in a medium sized roasting tin, pour over the sauce and stir to coat. Pour 300ml cold water, then arrange the oiled meatballs on top. Cook in the oven, uncovered, for 25 mins.
- Remove roasting tin from oven and arrange the mozzarella on top. Return to the oven for 10 mins, or until the pasta and meatballs are cooked through.
