Another yummy edition of Friday Foods and an easy mid-week recipe for you to try! This is a great alternative to a tuna pasta bake.
Leek & Mackerel Penne Bake (adapted from BBC Good Food)
Serves 2
2 leeks, trimmed and sliced
Knob of butter (I use Flora Salted Plant Based)
175g penne
200ml sour cream
1 tbsp capers
2 small smoked mackerel fillets, skinned, flesh flaked into large chunks
25g breadcrumbs
- Fry the leeks in the butter for 10-15 minutes until very soft. Meanwhile, cook the pasta following pack instructions and heat the grill. When the leeks are soft, stir in the sour cream, capers and flaked fish. Heat through for 1 min.
- Drain the pasta and stir into the sauce. Season, then tip everything into a baking dish. Scatter with breadcrumbs and grill until crisp.
And that’s it – a nice minimal effort dish to add into your dinner rotation!
