I love this recipe for a quick, healthy meal on a busy week. The recipe describes it as a “fall salad,” but I think it’s perfect for any time of year! You’ll be doing a lot of munching and crunching on this salad.
Apple Pecan Fall Salad (inspired from simplejoy.com recipe)
Serves 2 in big bowls or can be used as a side salad for 4
For Salad:
Bag of mixed greens/salad mix
1 apple, diced (I mainly use Pink Lady or Gala)
1 pear, diced
Dried cranberries (as many as you want)
Blue cheese, crumbled (as much as you want)
Salted Pecans, pieces (as many as you want)
For Dressing:
Cup olive oil
Juice from a lime
tablespoon of honey
1 tsp dijon mustard
Season with salt and pepper to taste
Mix the dressing ingredients together, adjusting to how much or little you want for your salad. Mix the salad ingredients together and toss with the dressing.
I tend to just “eyeball” everything for this recipe as it turns out delicious no matter how much or little dressing you have mixed in.
