It’s been a while since I’ve done a Friday Foods, but here it is! This edition of Friday Foods is a delicious and super easy pasta dish I’ve made a few times now. It’s perfect for dinner in the middle of the week as it is low effort. I’ve gotten the recipe from BBC Easy Cook, but I’ve adapted some of it to fit my needs/taste.
Creamy Sausage & Fennel One Pan Pasta
Serves 2
1 tbsp olive oil
4 pork sausages, skin removed
1 clove of garlic, sliced (I use about a tsp of garlic granules instead of a clove)
1 tsp fennel seeds
1/2 tsp smoked paprika
400g can of chopped tomatoes
1 tbsp tomato purée
450 ml light chicken stock
175g rigatoni or penne pasta (I use rigatoni)
2 tbsp soft cheese (or creme frâiche/double cream – I use lactose free soft cheese)
2 tbsp parmesan, finely grated (I end up using hard cheese)
- Heat the oil in a nonstick pan, then pinch in pieces of the sausage and fry until browned all over, breaking it up into smaller pieces as you fry. Add the garlic, fennel seeds and paprika and cook for 2 mins.
- Tip in the tomatoes, tomato purée and stock and bring to a simmer. Stir in the pasta, put on a lid and cook for 12-15 minutes (I end up cooking it for about 20 minutes to make sure the pasta is done), stirring now and again. When pasta is almost cooked, stir in the soft cheese & parmesan and sit off heat for 2 minutes.
